Power Slaw

I am not a huge fan of cole slaw, but I made this as part of my new fitness diet… (abs are made in the kitchen right?) Not too horrible. I would eat it again….
Took me around an hour to make, grilling the chicken, and finding/measuring all the ingredients, but it turned out decent.

Ingredients
* 5 ounces chicken breast, boneless, cooked
* 2 tablespoons green onion, chopped
* 2 cups cabbage, shredded
* 1/3 cup carrot, grated
* 1/2 cup apples, tart, peeled, sliced
* 1 1/2 tablespoons pecans, chopped
* 2 tablespoons golden raisins
* 1 1/2 tablespoons mayonnaise, low-fat
* 1 tablespoon low-fat buttermilk
* 1/4 teaspoon lemon juice
* 1/2 teaspoon white-rice vinegar
* 1/4 teaspoon honey
* 1/8 teaspoon black pepper
* 3 rice cakes, plain, unsalted
Preparation
Cut cooked chicken into bite-sized chunks. Slice green onion. In a bowl, toss the chicken, onion, cabbage, carrot, apple, pecans and raisins. Whisk together the mayonnaise, buttermilk, lemon juice, vinegar, honey and pepper. Pour over chicken and cabbage mixture. Mix gently. Refrigerate until ready to serve. Serve with rice cakes on the side. Enjoy with a calorie free beverage.

The beginning of ‘Insanity’ by Shaun T.

I set a goal last year, to burn 120,000 calories in a year doing cardio (Running and Biking) as measured by a Garmin 405 GPS (it doesn’t lie) I am nearing that goal, and should be able to knock it out quite easily in December with a few small rides / runs.
That being said, I want to be the best I can be. I want to see my abs before I am too old. I finished the P90X workout program earlier this year, and can’t argue with the results. I gained back 10 pounds after I finished it though. Just due to a poor diet.
My new workout program is Insanity by Shaun T.
This isn’t for beginners. You had better be in decent cardio shape before you start this.
I did the fit test today and for the most part, did better than the 2 people in the video that were there to demonstrate. I don’t wanna brag (well ok, I do a little), but I thought that was pretty cool. I don’t really want to measure myself against others though. I want to measure myself against me. I think I can lose a lot of weight, see my total 6-10 pack again, and be a decent competitor in the AAU this year. I also want to get faster. I am a decent athlete, but carrying the extra weight I have slows me down a lot. I feel like I am going fast, but then I see a video of me, and it is disappointing to say the least.
These are the results of my first fit test (you do it every 2 weeks)
1. Switch Kicks – 150
2. Power Jacks – 70
3. Power Knees – 80

5. Globe Jumps – 10

There are going to be a few days where doing the workouts simply won’t be possible, but I plan on sticking to the diet, and doing it as hard as I possibly can.
Here are a few photos of me before the Fitness Test, and one of me after it. This will be challenging to say the least.
